A regale you can the taste with a sweet pancake but also with with flat sales in accompaniment. With Roquefort cheese or foie gras.
–sugar: 700 gr
–Fig: 1000 gr
(1) wash the figs, remove the tail and cut into pieces.
(2) put them in a cooking pot, pour the sugar, stirring well and let macerate for 1 hour.
(3) cook for 20 minutes over medium heat, then mount a little until boiling. Stir from time to time and made the cold plate test to find out if your jam is cooked. (This test is to pour a drop into a cold dish if it freezes right away; it is cooked!)
(4) pour the jam into jars very clean, scalded, close them immediately. Store them in a cool, dry place.
