A delicious recipe for elderberry jam. Above all, choose well elderberry berries edible, recognizable by the black color of the grain.

1 kg of elderberries
800g sugar

(1) wash elderberries, drain thoroughly and put them in a bowl to jams. Add sugar and 40 cl water, wear all a boil and cook over high heat for 20 minutes, taking care to stir frequently and gently using a skimmer that elderberries do not attach to the bottom of the basin.
(2) check the cooking: a bit of jam on a cold plate must be fixed quickly. Then remove the Pan from heat and carefully skim the elderberry jam, and then blend one last time.
(3) put in pots using the funnel and a ladle, cover and sterilize.
